Initial ageing: 2 years and 2 months in a mix of ex bourbon and ex Australian wine barrels
Finish: 1 year and 9 months in ex aged Porter beer casks, that had previously contained Stone beer from Stone & Wood
Tasting notes: The Porter Cask finish brings notes of dark chocolate, roasted coffee beans, malted barely and smoke.
Other comments: Porter Cask is from the same 2019 harvest as Husk Signature ACR and it is interesting to taste them side by side to better understand the Porter Cask finish contribution. At 46% ABV, some drinkers might like to add a little water to their glass if enjoyed neat.
The Story
Here’s how this incredible rum came to be. Stone & Wood, legends of the craft brewing world, create a traditional porter called Stone Beer. They use hot stones to caramelise the sugars in the wort, giving their beer a unique depth and complexity. We saw a golden opportunity there. Those porter barrels? Perfect for finishing our rum!
Several years later, Husk Porter ACR is finally ready. It’s made from 100% single estate cane juice, aged in Aussie wine barrels, and then given the royal treatment in Stone & Wood’s ex-Porter barrels.
The result? A rum that's like a liquid symphony of caramel, roasted malt, and dark chocolate. You’ll get toffee, vanilla, and a cheeky hint of smokiness dancing on your palate. Talk about a winter warmer!
As our Head Distiller, Quentin Brival, puts it: “The stone beer technique adds a layer of complexity and richness to our rum, creating a truly unique and exceptional spirit.”
