ABOUT THIS BATCH #5
Paul and Quentin are quietly chuffed with this batch, having changed the barrel selection from that of previous years. For the first time this batch has been drawn from virgin American Oak barrels from three different harvests instead of two - made by Paul in 2014, 2015 and 2016. Over those years the production methods - harvesting, distilling, barrelling - changed and evolved, resulting in some excitingly varied aged results.
The 2014 and 2016 harvests were harvested by hand with old fashioned cane knives after storms came through and blew the sugar cane over, while the 2015 harvest was harvested with a set cutter from the 1950s. This rum was all distilled in our 1000L hand- beaten Spanish copper pot still in the little green shed.
We’ve also welcomed some new suppliers to the Bam Bam family, with the bulk of our native ginger now coming from Buck’s Farm down the road in the Tweed Valley.
To supplement Buck’s ginger, our distillers Steve and Quentin also spent a couple of afternoons foraging for some home-grown wild ginger, selecting the best roots from the Husk farm rainforest and riverbank.
As always our organic orange peel is hand-peeled by Robyn and Jessie, then sun-dried on the back deck at Husk.
We'll be making this summer batch of Bam Bam part of our Husk family Christmas, in cocktail form and in spiced rum balls and Christmas cake - yum.
Bottles are now available online, from the Husk cellar door (open Wednesday - Sunday) and selected local bottle shops including BWS stores in the Northern Rivers and along the Gold Coast.
