Bar spotlight: AGNES, Brisbane

 

Tucked away in Fortitude Valley, Brisbane, an old brick warehouse has been transformed into a celebration of wood-fired cooking. Agnes is a charming restaurant that is warm and inviting, and equally sophisticated. We spoke to Cody from Agnes about how they incorporate Husk into the Agnes dining experience.

What is it that you love about Husk Rum/Ink Gin product?

I stumbled across Husk Pure Cane Spirit about four years ago when I was researching spirits for the opening of our Japanese restaurant, Honto, and I fell in love immediately. I had always had a soft spot for agricole spirits, and finding a quintessentially Australian version of this was fantastic. I love the farm to bottle approach, and the uniqueness of the product really impressed me.

What’s your all time favourite Husk Rum/Ink Gin spirit?

I don't think you can go past the Pure Cane, however the Botanic spirit is a very close second!

Favourite Husk Rum/Ink Gin cocktail?

A classic Daiquiri on Husk Pure Cane is out of this world - 60ml Pure Cane Spirit, 30ml fresh lime juice, 2 teaspoons caster sugar - shaken hard - served up - heaven. 

We did a twist on this at Honto by infusing the spirit with the stem of the wasabi plant, and it was one of my favourite cocktails that I've ever come up with!

 "Meaningful Pursuit"

 Ingredients:

45ml Husk Botanic Spirit

10ml Brookie's Mac Liqueur

20ml Strawberry & Anise Myrtle Syrup

15ml Lemon Juice

 Method:

Swizzled in a tall glass with crushed ice and garnished with an anise myrtle leaf.

 “We make our strawberry syrup in a thermomix with pectinase which clarifies the syrup, however a simple substitute can be made by just throwing some fresh strawberries in a pot, covering them in sugar and adding a splash of water. Cook this on a low heat until sugar is dissolved and strawberries are soft and then blitz with either a stick blender or in a blender and strain through a fine strainer. If you can't find anise myrtle, your nan may have a bottle of Pernod on her top shelf, so dust that off and throw a drop or two in to get that lovely anise flavour.”
