BAM BAM and PURE CANE 50 will be BACK on Monday 1st March.

THE NEW TASTE OF AUSTRALIAN RUM

As promised, this new expression of our signature spiced rum will be available next Monday 1st March. REJOICE!

Boasting our signature spice flavour profile of roasted wattle seed, native ginger, sun-dried orange and mandarin peel, vanilla, cinnamon and golden berries with a pinch of sea salt, Bam Bam is now distilled with 100% Tweed Valley Cane Honey. 

Cane Honey, the base for this new rum, starts out as pure Tweed Valley cane juice clarified and reduced to a honey at the Condong Sugar Mill, just 6 kms upstream from Husk Distillers, Tumbulgum.

Husk collects the honey just before its seeded for sugar production, while it’s still hot. We bring it back to Tumbulgum where it’s fermented, distilled, and aged for a minimum of 2 years on rejuvenated ex Penfolds hogsheads.

Selected barrels are then blended and macerated for several months with whole organic botanicals, the same familiar spice bill we’ve used since the first release of Spiced Bam Bam in 2017.

You might ask why the change from juice to honey, and the answer is pretty simple. The rich, spicy flavour of our whole organic botanicals impart a massive flavour bomb that perfectly compliments our barrel-aged, straight honey base rum.

We hope you’ll like this new expression. Bam Bam is all natural with no artificial flavours or colours and is best enjoyed over ice with a slice of orange or mixed with ginger beer and a slice of lime for the perfect Dark & Stormy.

TASTING NOTES

Rich & Spicy

Colour: Golden

Nose: Cinnamon and orange lead into a balanced blend of ginger, raw sugar and vanilla. Hints of golden berries at the end. 

Palate: In line with the nose, silky cinnamon and orange-peel notes are followed by a kick of ginger, raw sugar and vanilla goodness. Hint of tart golden berries and sea salt.  

Finish: Roasted nut and coffee bean.

Rum lovers rejoice! The 2020 harvest of HUSK PURE CANE 50 is also available.

Rum best reveals its flavours at higher strength, and Pure Cane 50 delivers this complexity to rum lovers and bartenders at the traditional strength of 50% alc./vol.

This paddock to bottle spirit was made from sugarcane harvested towards the end of the 2020 season.

Pete harvested the sugarcane from the paddocks behind Husk Distillery and brought it to our sugar mill where Anthony and the team were waiting to extract the first press juice.

The fresh, vibrant juice was pumped straight into the distillery where our yeast got to work turning the highly concentrated sugars into alcohol.

The rich aromas and complex flavour compounds that developed in the fermentation reflect our unique terroir and the specific growing conditions of 2020.

These flavours concentrate in the distillation - for this batch, Pure Cane 50 was column distilled in our Forsyth still. The distilled spirit was collected and slowly reduced, rested and gently stirred for several months to marry and preserve those bold characteristics.

Rum lovers will best enjoy this full flavoured cultivated cane spirit in a ti punch, a daiquiri or a piña colada.

Those who enjoy the sweeter things in life can also mix Pure Cane 50 with an Australian ginger beer and a squeeze of lime.
