1866 Tumbulgum Rum is a blend of four barrels of paddock to bottle rum laid down in 2013 – two American Oak and two ex-Bourbon barrels.

Pure Cane New Make is the first product release from the North Coast Bar Series of fresh, young agricole rums and cane spirits designed to be mixed in simple, refreshing ways that highlight the flavour and style of Northern NSW.
This unaged agricole is fresh, vibrant & perfect for cocktails including caipirinhas (kai-pee-reen-yas), Ti Punch, daiquiris, mojitos as well as many simple, refreshing, back to basics cocktails.

Ink Gin is a premium dry gin made with 13 botanicals that include a mix of traditional and Australian natives, Hungarian Juniper berries are the largest botanicial component and form the basis of Ink Gin but Inks defining character comes from the second tier group of botanicals led by locally grown lemon myrtle leaf, corriander seed, Tasmanian pepperberry and freshly peeled sundried sweet orange peel. Together the major ingredients give Ink Gin its fresh piney, citrus and spicy aroma and flavour. The next group of minor botanicals include elderflower, cinnamon, cardamom, angelica, oris, licorice root and lemon peel. Like a pinch of salt, these minor ingredients are critical to the end result adding perfume, body and balance.
The final ingredient is infused after the distillation. The trimmed and carefully prepared flower petals of the butterfly pea give Ink Gin its distinctive colour.
The floral ink has another curious property. It is pH sensitive, changing from blue to blush pink when mixed with tonic water and giving a simple Ink Gin and tonic a striking edge. But apart from its curious chemistry, the delicate obscuration of the floral ink makes for smooth drinking straight over ice and the flowers subtle astringency leaves the palate crisp and clean allowing the citrus and floral notes of the major botanicals a long, refreshing finish.

The first of only two barrels of Husk Rum produced in 2012.
Our first ever barrel of Husk Rum was produced from the first press juice of hand cut North Tumbulgum sugar cane variety Q124. Double distilled and double barrel aged, nine months in new heavily charred American oak then in an ex-Bourbon barrel. This double barrel maturation imparts the full flavour and colour only available from new oak together with the mellow maturation and subtle character of time spent in ex-Bourbon barrels.
The 2012 harvest Husk Virgin Cane Rum is a full bodied small batch sipping rum best enjoyed neat, or on a hot day, mixed with premium tonic water on ice with a twist of orange.
